Nationally acclaimed bakery Poulette Bakeshop will move to The Juniper in the fall of 2025, a brand-new luxury rental residence located at the gateway of downtown Parker’s Mainstreet. The agreement marks the first confirmed retail tenant at The Juniper, which was co-developed by Colorado-based real estate and investment firm MGL Partners and U.S. developer Rockefeller Group and began pre-leasing its 264 upscale apartments in April 2025.
Poulette Bakeshop, which recently earned a coveted spot on The New York Times’ list of the 22 Best Independent Bakeries in the United States, signed a lease for 2,800 square feet for one of the four available ground-floor retail locations at The Juniper. Trevey Commercial Real Estate represented MGL Partners and Rockefeller Group, and eXp Commercial represented Poulette Bakeshop.
The move to The Juniper marks a significant milestone for the acclaimed bakery, as it transitions from its current Parker location at 19585 Hess Road Unit 107, to a larger, more prominent storefront along the town’s vibrant Mainstreet.

Founded in 2021 by husband-and-wife chef duo Alen Ramos and Carolyn Nugent—both of whom trained under world-renowned pastry master Pierre Hermé in Paris and led bread and pastry programs at celebrated establishments including Chef-of-the-Century Joel Robuchon’s three-Michelin-starred Las Vegas properties and elBulli in Spain, rated the number one restaurant in the world during their tenure–Poulette Bakeshop has quickly earned both local and national recognition. Known for its artisanal pastries, breads, and baked goods crafted with time-honored French patisserie techniques, the bakery has garnered numerous accolades. In addition to Poulette Bakeshop’s recognition by The New York Times, Ramos & Nugent earned semi-finalist honors in the 2024 and 2025 James Beard Awards and will be attending the 2025 awards ceremony in June as nominees for the national recognition of Best Pastry Chef and Baker
